Although ridiculous, it's possible, if you are using a trainer, that you have invisible vehicle activated, where you only see the wheels of the cars. Now, this is assuming you are having the issue with all vehicles?
Also, have you updated your GTA V a couple days ago to 1.0.791.2? It's also possible that your gameconfig.xml (even though I've never heard of this happening to somebody before) isn't compatible with the new update? Or, the vehicle, with your gameconfig.
At the end of the day, I'm not totally sure of what your problem is until you give more details on your issue.
I can only suggest checking if everything is up to date, that your game is not pirated, that you have installed the mod correctly. most importantly, try reinstalling your backup to see if that fixes the issue. If it does, then you'll know the mod is causing it and you can report back to us, and most importantly, the creator of the vehicle mod, that you've found a problem with the mod itself. You have a backup, right? Please tell me you do!
