Is there a way to revert back to the update before gunrunners update (just incase scripthook ceases development)?

@ptaco If you kept the 2 exes before the update you can downgrade and scripthook will work fine. You can use these:https://drive.google.com/open?id=0Bxuvk2wXAXAdZjhURjlVWXdvLVU
As long as you have the steam version they should work fine. Just replace the new one in the gta 5 root folder, Hope this helps

@ptaco Also, I highly suggest making a backup of you game version right now. Also keep those 2 exe files safe. Might help you a ton in the future.

@bur587 I have a problem, when I place the two exes in the root folder, my game crashes on loading screen. Any idea what the problem is here? Also I'm not running any mods, just a clean install of GTA V

Yes. Just replacing the exe won't do. There will be a new update.rpf, and it will mismatch with the one you have in your mods folder. You'd typically have to replace the entire update.rpf in your mods folder (and re-upload a custom gameconfig to it, if you had it, and, likewise, a self-rolled dlclist.xml file).
