How to play retail version without being forced to update to the latest patch on first game launch?

With every update R* is constantly destroying modding. In one of the updates before Biker DLC they have destroyed custom weapon Add-on mods (e.g. metroidguy's MG-42 Add-on and in Gunrunning multi-weapon turrets stopped working
I have a retail version of the game. Is there a way to block game from auto updating itself on the first launch just after installation ?
I just want to play game as it was back in december 2015 when i bought it. With working mods, without being forced to login every few days to just play offline or to download 1-2 gigabytes of unnecessary updates for online-only part of the game that I never used.

@Biggdogg Not working. After reinstalling game is missing GTA5.exe and update.rpf. And after applying one of the downgrades and copying required dlcs game is crashing to desktop when using Launcher Bypass or throwing errors about "incomplete installation" when using standard launcher.

One of the mods with automatic installation (.oiv package) (It probably was "World of Variety") caused the game to lag. Even removing all mods did not fixed the problem. So I gave up and reinstalled the game.

Because I was wondering if it is possible to mod the retail version "out of the box", without updating it to the latest patch.

Bypass may be working but downgrade isn't. I have 1.24, 1032 (biker dlc) and latest version backups. On the patch 1.24 game is crashing because of "incomplete Social Club installation". Fortunately Biker DLC is working well.
