Better way to keep playing GTA V post-update?

Hello, I apologize if this question has already been asked before but over the past few months, when a new update came out, I just turned off my wifi on my PC then started the game up and it did not update which I want but it's been very annoying lately and I was just curious if there is a better way to do this? Thank you!

You could block Steam/GTA V/Social Club with your firewall.

On STEAM it's easy: you can just restore your game install (you do make backups, right?!), as once STEAM has updated its game manifest (a few dirs up), it won't do a version check any longer (until the next update, of course).
Firewalling is a less effective method; for one, because it's only temporarily useful: after a few days the Rock* social club thingy will want you to log in, after all.

Make a backup of the social club installer, GTAV launchers (there are two) and a backup of the update folder (presuming you don't mod directly into it). You can also use RagePluginHook (RPH) to make a backup of those files for you as well. You can then tell it to revert your game version and it will set it back to the previous version that still runs while the devs work to update their mods for compatibility with the new DLC. Once those are done, just verify cache in steam for the game and Bam, you're on the new version, you can reinstall your mods and backup the new game version files for the next round.
I learned this the hard way during the T2 lawsuit debacle.
