Is it possible to downgrade the game?

I want to downgrade the game to the doomsday heist version
I'm using steam version now, ScriptHookV seems to not work here, is there any way to do this?

Hm, this I don't know.
I'm not sure if there is any way to actually block Rockstar updates (other than being offline of course). The update and login functions should be separate if you ask me... and pretty much everyone else around here.If you wish to stick to a certain version of the game, all you need to do is to remove the updates and keep reverting to the previous set of files. It should allow you to play in offline for at least some time without triggering the updater.

Can't I just download the doomsday patch and replace it with the newest patch? I can play the offline at all time (you know... mods are great)

Well, I'd say "do it on your own risk".
I'm not sure if I understand your point about "replacing doomsday patch" with another patch...Tell you what, I always use Social Club and Launcher to update my game because I consider it safest. This way, effectively, you no longer have to worry where from to actually get the update from. TBH I find it rather unorthodox to look for it anyplace other than Social Club!
My call, would be to let the updater run online this time and just do it's job. Just delete what you don't need after it's done. If, like you admit, you are able to play the game offline, then I think you're good to go.
