How to STOP MY GTAV from updates

I had a great GTAV set running in last april , few cool mods, all perfect.
Now there is this new update, it sneaked into my game and everything is like in panic mode not working.
I am not really interested in another 20 cars, I already have 50 ferraris
neither I am interested in another new club .
I just want my old good GTAV keep on working for the next years without any or zero updates
it works perfectly as it was in last april and I want to keep it that way . No more updates.
maybe in 2020 I will think about it.
I still have my old backup from april the complet 60+ GB on a separate disk .
but when I connect it , it says I need to re download the entire 60+ GB again .
I am not falling in that joke. there must be some trick to fix that but I could not find a good tutorial yet for that.
now lets say if I will be lucky to fix it , and use my april 2018 backup folder .
how do I stop GTAV from updating it ?
I want to keep everything as it was ,
can that be possible ?

I have seen this bypass launcher this morning and tested it
it works perfectly . and I was so happy.
than I updated to the new scripthookv this afternoon and all crashed
this make me decide to do no more updates in the next years.so I tried to go back to the bypass launch mod , and also that is not working anymore.
I will mess around till the end of the day to see if I can make it work again ,
but if I can believe you , what you are saying is that this is the answer to my question ?
using this bypass launch mod , will stop updates for me ? so I can stay with my old setup and old mods
is that correct ?

@elmentor yes, I was able to stay on the Smuggler's update for a while before deciding to update again; at that time, the latest was the Southern San Andreas SSS update. I "skipped" the doomsday update, basically. I haven't updated yet and can play GTA V just fine.

With GTAVLauncherBypass Im still playing with older version of the game. So far I have not gotten any request to update, so yeah its working.

I am very new to modding. Does steam not automatically update GTA? I just downloaded GTA last night. If I get the bypass mod now will it prevent any future updates?

@svgrigman1010 Steam won't update GTA V automatically if you set it to only update GTA V on launch. But that means that the game will still be updated, just only when you launch the game instead of automatically. This is why GTAVLauncherBypass is handy, but alternatively you can modify GTA V's appmanifest file every time it updates so that Steam thinks GTA V is already updated. But then if you accidentally press Play before modifying the file, you're shit outta luck.

@Jitnaught for steam i just let my game update then replace the updated files with a backup from the last patch, so steam thinks its updated when it's not

@Reacon Might as well switch to the appmanifest method then, as with that you don't need to wait for Steam to update the game anymore, and you don't need to keep a backup of the game's files.

@svgrigman1010 Script Hook V was updated for the latest patch, so it should work. OpenIV was updated as well.

Bit of an old topic, but how will GTAVLauncherBypass prevent gta5.exe from detecting it needs an update? But, more importantly, I like the appmanifest approach, but I see nothing so immediately in it that looks like a version number value I could fake. So, how can it be done, please?

@meimeiriver I'm only familiar with the Steam version. Steam still detects that the game needs to be updated, but running GTA5.exe while using GTAVLauncherBypass basically bypasses Steam, so Steam doesn't update it.

I see, thx. Yes, together with only allowing STEAM to update when the game starts (in its eyes) it should work.
