Are there any mods that fundamentally change single player/increase difficulty?

Hello

I speedrun GTA V single player on twitch but I have always wanted to do some 'gimmick' runs using mods that fundamentally change the way the game is played. For example, there is mod that makes your character always drunk and a mod where you die in one hit. Does anyone know of any other mods that might suit my needs?
