How do I get the old, glossy carbon back?

I'm not a fan of the matte carbon. Also, I'm using VisualV. Is it a VisualV thing? I don't think it is.

Best guess, you're talking about the 'vehicle_generic_carbon' in 'vehshare.ytd'
Replace 'mods' folder 'vehicle_generic_carbon's with one from your 'game' folder:
Have a look in a vanilla 'vehshare.ytd' in the game folder:...\Grand Theft Auto V\x64e.rpf\levels\gta5\vehicles.rpf\vehshare.ytd
or
...\Grand Theft Auto V\x64w.rpf\dlcpacks\mpbeach\dlc.rpf\x64\levels\gta5\vehicles\mpbeachvehicles.rpf\vehshare.ytd& compare the 'vehicle_generic_carbon'' texture in it/them to the one/s in your 'mods' folder 'vehshare.ytd''s to confirm
Note: You can use 'Ctrl+F3' in OpenIV to search for them. The search has a game folder/mods folder/both folders selection drop-down to aid you

Alternatively, NaturalVision Outdated Version contains a vanilla 'vehshare.ytd' here:...\NaturalVision Remastered by Razed\Optional Add-Ons\20. NaturalVision Uninstaller\UNINSTALL - NaturalVision Remastered\content\mod\vehshare.ytd
Have a read of the 'NVR VANILLA POPCYCLE.DAT:' part in this post for details on how to access the file. Instructions in post are for 'popcycle.dat' but the procedure & file location is the same
