searching for story mode missions

I'm trying to find and edit missions in story mode. I would like to replace some vehicles in missions and peds. Where are these files?

@Zentoria You can replace the vehicle itself and same as peds (not all of them are easy as replacing a vehicle) but if you are asking to let's say giving Lester the tailgater car only while doing his missions though, I got no idea about it.
The closest alternative I can think of is to use https://www.gta5-mods.com/scripts/dlc-vehicles-spawn-on-traffic 's vehicle swap option. It's swapping a vehicle model with another one without changing the model itself from game files (if I'm not wrong) but it doesn't happen on the go unfortunately
