Increase the performance of every Engine step or transmission Tuning

Im pretty new here and English is not my main language
...
I want to know, how i can change the perfomance between every engine tuning or transmission etc.for example:
engine 1 - stock plus 10%
engine 2 - stock plus 25%
...
engine 5 - stock plus 90% (or 80& or 70%... i hope, you got me)... i want to know if its possible to change the percentache of the tuning, what it does to the car ... also for Turbo and transmission.
