How can I block GTA V (Rockstar Launcher version) from auto-updating? I do not want updates ruining my stable modded build.

I've spent countless hours making the best modded version of the game that I could and have everything working flawlessly. I do not want Rockstar Games Launcher to suddenly update my game and cause me to have to start over. Can anyone tell me how to initially block it somehow? I also wanted to know if there is a way I can launch GTA 5 offline? I've tried to launch the game when I was offline and it simply doesn't launch. Thanks to anybody who can help!
