How do I start my game without it updating?

I backed up my game this morning when I saw that I had a pending update for gta v on steam, but when I went to open it using the "PlayGTAV.exe", because steam had only the option to update, and after having run, opened the rockstar launcher and it just threw me to steam that updated. Lucky that I did having the backup. Could someone please tell me how I open my game?

This topic of yours saved me a lot.
I learned the hard way about the lack of a backup, when there was that last update, now I leave saved at least three backups of the game.
