So.... since the new 2802 update is out now... Is 2372.2 STILL the best and most stable version to go for if you have got hundreds of mods and want to play with zero crashes? Or which version would you guys personally vote as individuals to be the king when it comes to stability with mods?

Everyone has their own opinion. There is no right or wrong.
Version 2372 is stable and does not crash unless you do really stupid things such as spawn 100+ ped or vehicle addons consecutively.
I must have well over a 1,000 peds and vehicles installed and loaded, but obviously not spawned at the same time.
As for emulators, they are just an additional component, they don't provide any benefits over a properly reverted and configured game.
As for mega maps like Liberty City and race tracks etc, I split the load. This is for 2 reasons, one is stability, and the other is I don't want to see a map floating in the sky above Los Santos while I'm playing. Kills the immersion.
Sure you can move maps (ymap settings) but I can't be bothered. Stability is key for me. Automation allows me to switch game modes and mods effortlessly with batch files.
I also keep versions of GTA5.exe after every update. So I'm not "either or". I have a wide variety of options and also 3 FiveM local/private servers.
Back to your point, 2372 works for me, strongly recommend it.
Stability however, is more linked to your hardware, software, mods, and configuration. Any version can be made stable, but some will require extensive fixes after a patch, for example after the falling through the map collisions fiasco. No need to do anything for 2372 and older versions ofc.
One good thing about reverting, you can get some popcorn and follow the threads about broken games after every patch, comfortable in your knowledge that your reverted game is totally immune to whatever R* delivers.

Hahahah on that last sentence. Great answer bro! I'm curious about splitting the load when using mega maps like Cayo Perico and Liberty City V Remix that you mentioned. I tried using just the dlcpacks for each of the maps instead of installling OIVs (I don't really trust them) yet the maps appear broken or simply with no ground textures so the water beneath is visible. Any solutions for that? (I am using all the essentials required). The LC map I use is Elcreador and Cayo Perico (Original Location) is by Elcreador as well.

There aren't any issues with 2372, however I'm using the matching version of SH5 as well as the gameconfig.xml from that time period. I can't vouch for any updated essential files although I did upgrade the packfile limit adjuster.
No issues at all.
I extract OIVs and install manually, never allow automatic installation.
As for splitting the load, my objective is to minimize duplication of game or mod files. For example, you can move your dlcpacks to anywhere inside the game folder and then share it with multiple mod folders. You can then use dlclist.xml to selectively load or not load dlc.
This is the approach I use currently but there is an even more efficient method which involves renaming the dlc folders themselves. If a folder is renamed temporarily, the dlclist.xml will not load it. This is much smarter than commenting out lines or using multiple versions of dlclist.xml.
Consequently you can put 10,000 + maps, vehicles, and peds in dlclist.xml and then using Windows batch files or powershell or any programming script, simply rename every single dlc folder so they won't be recognized by dlclist.xml, with one command, and then through a menu selectively restore the names only for those you want to load for a gameplay session.
This way you have full DIY control rather than depend on some idiot's mod which forces you to install 10 versions of the game and switch between them..

@JohnFromGWN Hello sir, I would like to know whether you are using LCMapdisabler, CayoPericostartpoint.asi, cayopericos.asi and the asi(s) that the Liberty City Remix comes with as well or are you just using the dlcpacks that come with each of the two maps? Thanks.

@JohnFromGWN Also, I previously installed LC Remix Map Mod and it seems to be incompatible with Forests Of San Andreas vegetation mod. But since you also have the FoSA mod and LC Remix, how do you make them work perfectly fine together with no texture glitching or either FoSA not loading at one time and LC remix not loading the other time?

@TheRuler666 This is very personal but I'm probably the only gamer who doesn't install scripts other than the essential ones. So to answer your question I only install the dlc and always manually, never through OIV. I do write my own OIVs, scripts, and menus.
As an alternative, CP can be loaded with a very simple script. No addons required although traffic paths are absent.

@TheRuler666 tbh, I'm not even sure which version of LC I have. I downloaded several and settled on one. I had to fix several issues such as flooding, missing T Rex skull, sound of ocean in Times Square etc. I swapped textures and also fixed the statue of Liberty with a proper torch. Map is fantastic and stable. I also have the legal copy of IV.
Once more, unlike many modders, I believe less is more. I only load the mods I want to explore for a given session. This has 2 benefits. First is stability. Second is when in LS I don't want to see another map floating in the sky. Immersion is very important to me.
Again I don't use other people's scripts so I don't disable LS. In passing, I do disable it in FiveM because I have a localhost server dedicated to CP.My method exploits the fact that addons will only load if they are correctly named in dlclist.xml. I enter all my addons in dlclist.xml, easily close to a thousand, and then through windows batch files, as a menu, I select which maps and MLOs to load by renaming their folders.
All peds and vehicles however are loaded since they don't cause any issues until spawned, contrary to maps and MLOs which spawn at launch if allowed to.
So, I'm sorry but I can't answer your question because I don’t load Forests with LC.
