How do you uninstall world of variety/wov

I need to uninstall wov ive removed it from the dlc list but its still there

simply replace your wov files with the original gta files.

This tut will show you how to access the 'assembly.xml' within the 'wov.oiv' (or any '.oiv') & see what files were installed & where they were installed.
Either follow the tut to create your own '.oiv' uninstaller, or go line by line in the '<content>' section of the 'assembly.xml' & replace each installed file with it's vanilla original/any backups you may have etc.
