I need help adding gameconfig.xml into the game

I am trying to make it so I can add more than 1 add on car. After what I have read on the forums, the problem seems to be that I need to get a different gameconfig.xml. Could someone please tell me how to add a new/modified gameconfig.xml into the game because I am fairly new to modding and I do not want to mess anything up.

@Planbsk8er9 Just copy the entire update.rpf to a backup folder so you can always revert back to it when things went wrong...
You do use the mods folder method? If not read up on that. Google it.
