You will need to rename the folders as needed every few days, maybe every 5 days. Update and launch the game with the vanilla folder renamed obviously to GTA 5. Then after that exit the game, put in scofflineonly in the launcher commands, exit the launcher, copy the egstore folder from the vanilla updated to the modded folder. Rename the vanilla to something like GTA 5 vanilla and rename the modded to GTA 5. Then get back into egs launcher. Make sure you have as -scofflineonly. Then launch. Rinse and repeat. Obviously you need to have update game automatically off.

I am epic games version 1.1868.4 using the -scofflineonly method. You need two GTAV installs in same folder. One vanilla which you keep updated. The other modded and with the "-scofflineonly" which you keep the same. You need to turn off "allow autoupdates" and "allow installs during gameplay" in epic games launcher. When an update rolls around you need to rename you modded GTAV folder from "GTAV" to something like "GTAV modded" and then rename you vanilla unmodded folder to "GTAV." Then you update the vanilla folder, launch game and then exit the game and epic games launcher completely. You need to copy the "egstore" folder from the vanilla and updated install folder into your non-updated modded folder and replace files. Then once again rename your vanilla unmodded updated folder from "GTAV" to something like "GTAV vanilla." Then rename your non-updated modded folder from "GTAV modded" to "GTAV." If you have the -scofflineonly in your modded folder and have replaced your modded folder's "egstore" folder with that from the vanilla after you updated that vanilla install, you should be able to launch your modded version once again.

@Coppa_Calypse and for anyone else, sorry just saw you had the DVD version. I suspect if you only now installed the rockstar games launcher and social club you may not have had Rockstar-Games-Launcher.exe and Social-Club-Setup.exe originally. The method I linked to above requires those two .exes to be replaced with .exes from previous patches. If you didn't have copies of those .exes I suspect downgrading would be impossible since both of those .exes have been updated with this latest patch.
