There's also Bison Classic, Bullet Classic, Cavalcade Retro and Phantom Classic that should be included as mods too. I could do them myself, but the only thing I can make them would be through Blender. I've created descriptions of them through GTA Fanon Wiki, with the Bullet Classic described as a mix of two Ford GT40's, namely the MkI and the MkIV.
